How to Make Crostini

 Roasted Cauliflower, Spinach,
Feta, and Beet Salad

I will show you how to make this delicious cauliflower, beet and feta cheese salad. Easy to prepare, and quick to impress!  It's a scrumptious salad, which looks amazing when plated especially on our garden collection plates.

You Will Need:

one head of fresh cauliflower
1/2 cup crumbled feta cheese
1/4 cup honey glazed pecans
fresh spinach leaves
4 small beets peeled and sliced

Drizzle beets with:
2 Tbsp. olive oil
1 tbsp. honey
2 tbsp. balsamic vinegar
salt and pepper 

Dressing:
3 tbsp. Dijon mustard
2 tbsp. olive oil
3 tbsp. vinegar
1 tbsp. honey
1 tsp. toasted sesame oil
1 clove crushed garlic
salt to taste

Instructions:

Preheat your oven to 350 degrees Fahrenheit. In two separate baking pans, prepare the cauliflower and beets.  Toss the beets in olive oil, honey, balsamic vinegar, and season lightly with salt & pepper. Place in the oven and bake for 50 minutes. Toss the cauliflower in olive oil, salt and pepper and bake for 24 minutes.
Meanwhile, prepare your dressing. Blend the mustard, olive oil, vinegar, honey, sesame oil, garlic, salt, and pepper together.

To layer the salad, start with the fresh spinach leaves. Add the roasted cauliflower and beets. Top with crumbled feta cheese and honey glazed pecans. Drizzle the dressing over it. Hearty Appetite! A colorful, healthful, and most of all delicous salad!
