You Will Need:

french bread
chopped fresh tomatoes
olives, pitted
olive oil
salt
pepper
butter
shredded cheese
freshly chopped green herbs - such as basil or parsley

Instructions:

Preheat your oven to 400 degrees Fahrenheit. Toss the tomatoes in olive oil and season lightly with salt & pepper. Slice your baguette into medium slices, about 3/4 inch thick. Brush the baguette slices with olive oil. Combine all the ingredients for the pesto in a small food processor, and pulse for a few seconds until well combined. Taste and see if more salt or lemon juice is needed. To assemble the crostini: add a smear of butter and about 1/2 - 3/4 teaspoon pesto to each slice of baguette. Top each crostini with a teaspoon of tomatoes and olives. Sprinkle with shredded cheese. Transfer to the oven and bake on 400 degress fahrenheit for approximately 5-10 minutes until the cheese is bubbled and the bread looks toasted but not burnt. Add chopped herbs on the crostini and serve warm immediately.
