I once created this recipe for a family celebration. The recipe got such rave reviews that I've been asked to recreate these multiple times for different events.
I love the flavor of spinach and think it lends a beautiful creaminess to any dish. But don't worry, even if you are not such a fan of spinach, this recipe can still work for you.
The idea is a cheesy, crispy, melt in your mouth delicacy that just whets your appetite. The spinach is there to add a beautiful creamy consistency to your mixture so that it melts straight into your mouth. The result is light, flavorful, crispy, cheesy and just plain delicious!

You Will Need:
egg roll wrappers (from the freezer section)
1 24 oz. bag frozen spinach
16 oz. ricotta cheese
8 oz. shredded cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 tsp. minced garlic
Instructions:
Cook the spinach and drain it. Mix all the ingredients together in a bowl with a spoon. Cut the egg roll wrappers in half, fill with the spinach mixture and roll them up. Wet the ends of the wrapper with a bit of water and glue shut so that the spring roll doesn't open during frying. Heat oil and when it sizzles add the roll ups, and fry till golden. Flip over in midway through cooking. Serve with warmed marinara, or pizza sauce. Enjoy!
