With Valentine's around the corner, the search is real for some new and exciting recipes. Desserts are great, but it is possible for one to eat too many sweets. To combat the sickly feeling, but not to compromise on the Valentine's romantic theme, here are some recipes for some real food that can be enjoyed for a Galentine's brunch, or a sweet intimate lunch with your SO.
Here I've compiled some mouthwatering recipes that are in the spirit of Valentine's. You can also serve these dishes on pink or red dinnerware to take the romantic theme up a notch. Let your creativity take you far. Any small touches you add automatically upgrade your presentation to a thoughtful dish prepared for your loved one, versus a simple meal. 1. Tomato Basil Feta Skewers
You Will Need:
mid size skewers (preferably decorated ones like this pearl handle)
cherry tomatoes
feta cheese balls (or similar cheese)
olive oil
freshly chopped basil
freshly chopped parsley
salt
pepper
garlic
Instructions:
Thread cherry tomatoes, and feta balls onto pretty skewers. (Try to find pretty small tomatoes and balled feta cheese instead of the typical square shape.) Prepare the oil in a shallow bowl or plate. Mix olive oil, chopped greens, and spices together. Carefully dip each skewer into the oil mixture, coating it fully. Allow excess oil to drip back into the bowl.
2. Watermelon Feta Salad
You Will Need:
arugula and baby spinach leaves
thinly sliced red onion
cubed watermelon
crumbled high quality feta cheese
freshly chopped mint leaves
3 tablespoons olive oil
2 teaspoons white balsamic vinegar
dash of black pepper
½ teaspoon kosher salt
½ teaspoon garlic powder
Instructions:
Whisk olive oil, vinegar, and spices together in a large mixing bowl. Add arugula, mint and red onion; toss to coat. Gently stir in watermelon and sprinkle feta cheese to serve.
3. Pomegranate Beet Feta Salad
You Will Need:
baby spinach leaves
beets sliced into medium thin rounds
pomegranate arils
fresh strawberries sliced thinly
crumbled feta cheese
slivered toasted almonds
candied pecans
DRESSING:
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon white sugar or honey
1 lemon, zested and juiced
salt and pepper to taste
Instructions:
Start by cutting hearts out from your beet rounds. Use heart cutters of various sizes to get cute decorative hearts. Next start layering the salad with the baby spinach leaves. Afterward, add the strawberries and pomegranates. Next add the beet hearts. Sprinkle feta, almonds and pecans over the salad generously. Whisk together the dressing ingredients and drizzle it right before serving.
