Herb Onion Soup with Cheesy Garlic Bread
This recipe takes a twist on the beloved French Onion Soup. Added for kick are some amazing herbs which lend incredible flavor. Served on the side, is a super easy cheese garlic bread, made with any leftover bread you have handy.

You Will Need:
For the Soup:
3 large onions, sliced thinly
4 cloves garlic, chopped
1/3 cup dry white wine
8 cup beef broth
1 bay leaf
1 large sprig rosemary, plus 1/2 teaspoon minced
1 large sprig sage, plus 1/2 teaspoon minced
1 large sprig fresh thyme, plus 1/2 teaspoon minced
For the Cheesy Garlic Bread:
1 Loaf French bread
1/2 cup salted butter softened
1/2 teaspoon garlic powder
3 garlic cloves minced
1 teaspoon Italian seasoning
1 cup Colby jack cheese shredded
1 cup mozzarella cheese shredded
fresh chopped parsley for garnish
Instructions:
To cook the Soup:
Heat oil in the pot and add the onions, cooking on medium-low heat and stirring occasionally until very tender, about 30 minutes. Add the garlic and continue cooking until the onions are golden brown and very soft, about 20 minutes longer. Pour in the wine and cook until the wine evaporates and the onions are brown and jamlike, about 12 minutes. Add the broth, bay leaf, and rosemary, sage, and thyme sprigs and simmer the soup very gently to meld the flavors, about 20 minutes. Remove and discard the herb sprigs. (The soup can be cooled, covered, and refrigerated for up to 3 days. Reheat to serving temperature before continuing.)
To make the Garlic Bread:
Preheat oven to 400 degrees. Cut your French bread loaf lengthwise and place on top of a baking sheet.
Combine butter spread: In a small bowl combine softened butter, garlic powder, minced garlic, Italian seasoning and shredded cheese. Spread evenly on each side of the garlic bread. Top with Colby and mozzarella cheese. Bake in the oven for 12-15 minutes until butter is melted and bubbly. Sprinkle with parsley if desired.
