Barbecued Strawberry Shortcake

What could be cuter than strawberry shortcake on a stick? With melted marshmallows and chocolate...mmm. Nuff said, let's get cooking! Your tastebuds will do the happy dance. 

This recipe takes a bit more advance planning since you need to bake the cake and have it cooled beforehand. But I think that the end result is well worth the spectacular flavors. 

Ingredients for the vanilla cake:

  • 12 eggs separated
  • 3 cups sugar
  • 2 cups flour
  • 1 teaspoon vanilla sugar
  • 1 teaspoon baking powder

Instructions for the cake:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Place the egg whites in a mixer and beat until peaks form. Slowly add the sugar until shiny and stiff. Add in the yolks and flour on a low speed. 
  3. Line 2 cookie sheets with parchment paper and divide the batter between the sheets. 
  4. Bake for 25 minutes or until the top is lightly golden and a toothpick comes out clean. 

To assemble the skewers:

  1. Cut the cake into square bites.
  2. Layer your skewer with cake, fresh strawberries, and marshmallows. (You can add any other fruits you think will be fun, such as pineapple, mango or peaches.)
  3. Lightly toast skewers on the grill until the marshmallows are gooey. This is best done on a lower flame. Or you might want to first heat the skewers on the upper rack before giving them a final grill to make sure the marshmallows have reached perfect gooeyness. 
  4. Drizzle with optional chocolate.
